I won’t subject you to a lot of fluff today. He’s a great recipe that totally fixes a pizza craving in a healthy way, without a bunch of paleo flours and minimal effort. It’s totally customizable with your favorite pizza toppings, nut cheese, or real cheese if you still eat dairy.
Pizza Fried Cabbage
1/2 head of cabbage, chopped
1 large onion, chopped
4 cloves garlic, minced
1 can tomato paste
1/4 cup apple cider vinegar
1 tablespoon dried basil
1 tablespoon oregano
1 tablespoon olive oil (not virgin)
1 tsp salt
black pepper to taste
Heat up the oil over medium heat and throw in onions.
Sauté until the edges show some browning.
Add in the garlic and cabbage and sauté for 2 minutes.
Turn down the heat to medium-low, mix in the tomato paste, vinegar and spices.
Cover and let cook 10-15 minutes, or long enough for cabbage to be softened.
Stir occasionally to prevent scorching.
I served with a sprinkle of nutritional yeast.
Tips on additions:
Add in paleo compliant Italian sausage, pepperoni or ground beef to make it a hearty main dish, rather than a side dish.
If adding other veggies as ”toppings” add them in approximately 5 minutes prior to taking off the heat. That way they are warmed and slightly cooked but not overly soft or soggy.
Ideas for the topping veggies: green peppers, mushrooms, black olives, jalapeños, pickled peppers, diced tomatoes, or, if it’s your thing, some pineapple!
