Paleo Pumpkin Spice Chia Pudding

Pumpkin Spice Chia Pudding


  • 1 1/2 cups pumpkin purée

  • 2 cups water

  • 1 cup chia seeds

  • 1 1/4 cup ground flax

  • 1/2 cup maple syrup

  • 1 tablespoon cinnamon

  • 2 tsp clove

  • 1/2 tsp nutmeg

  • 1/2 tsp allspice

  • 1/2 tsp nutmeg

  • pinch of salt


  1. Whisk together the pumpkin, water and maple syrup.

  2. Whisk in the chia, and flax.

  3. Mix in the spices with a spoon (it will already be thickening).

  4. Place in fridge at least 4 hours (overnight is better!)


Warm up and serve with 1/2 tablespoon of ghee, coconut oil or butter flavored coconut oil from nutiva. If you use grass-fed butter, that's a great option, also.

This makes a wonderfully filling breakfast with the addition of a little fat, as suggested above.
