Paleo Pumpkin Spice Chia Pudding

Pumpkin Spice Chia Pudding
Ingredients:
1 1/2 cups pumpkin purée
2 cups water
1 cup chia seeds
1 1/4 cup ground flax
1/2 cup maple syrup
1 tablespoon cinnamon
2 tsp clove
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp nutmeg
pinch of salt

Directions:
Whisk together the pumpkin, water and maple syrup.
Whisk in the chia, and flax.
Mix in the spices with a spoon (it will already be thickening).
Place in fridge at least 4 hours (overnight is better!)
TIPS:
Warm up and serve with 1/2 tablespoon of ghee, coconut oil or butter flavored coconut oil from nutiva. If you use grass-fed butter, that's a great option, also.
This makes a wonderfully filling breakfast with the addition of a little fat, as suggested above.
