Lemon Chia Bars

These bars are gooey, chewy and so delicious. If you prefer a more tart bar, rather than sweet, leave out up to half the sugar, but be aware it will make the end result slightly less chewy.
Paleo Lemon Chia Seed Bars
Ingredients:
6 eggs
1/3 cup coconut flour
1/3 cup chia seeds
2/3 cup melted coconut oil
1 cup of coconut sugar
1 tsp lemon extract
1/2 tsp salt
Directions:
Whisk the eggs, chia, sugar, salt, and extract together in a bowl.
Mix in the coconut flour until well combined.
Mix in the melted coconut oil.
Line an 8x11 pan with parchment paper and spread the batter evenly.
Bake at 350 for 35 minutes.
